One bowl Cupcakes

Do you ever feel the need to make some thing quick where you don't have to bring out your cake mixer or too many bowls and  deal with all that cleaning..


This is a perfect cupcake recipe that does just that. A great recipe to use when baking with kids.
They remind me of my mom and my childhood because I'd get a chance to make a cake all by myself!!! Mom would put everything in a bowl, I'd mix it up and tell everybody I made the cupcakes all by myself!!!

They are my kids favorite because they taste so good on their own and my favorite because they are so easy to make.

This recipe will make 20 to 24 cupcakes



Ingredients
250 grams unsalted butter soft (softer that room temperature but not melted)
250 grams All-Purpose flour
220 grams caster sugar or fine grain sugar
4 eggs
2 tsp Baking powder
A pinch of salt
4 tbsp milk
2 tsp of Vanilla


Preheat the oven to 170C /340F. Line you muffin pan with cupcake lines and spray them lightly.
Place everything in a bowl. Including the flour, milk and vanilla essence.

Use a whisk to stir it smooth until you see no lumps. If you butter is soft and your sugar fine grain this will take you about 30 secs.
At this stage you could divide the mixture is half.
Bake one half as Vanilla cupcakes and to the other half 
Melt and cool about 50 grams of chocolate, mix and now you have Chocolate flavored cupcakes.

Scoop the batter into individual cups and bake for about 18 to 22 minutes or until a skewer inserted in the center comes out clean.
That's it... Enjoy.
You can eat them as is or try them out with my tasty Vanilla Buttercream frosting.

Hey...this is just wow!! ur blogs simply awesome....i think this is the perfect place where i can enter the world of baking:)...wanted to start with cupcakes...was just wondering what is the difference between this all in one bowl cupcake recipe and the previous cupcake recipe where you put stuff in different bowls...wud be indeed great to know...

  2. Hi Japs, I did not understand your comment. Every cupcake recipe is different. The first one is made with Sour Cream while the one bowl cupcakes are made with milk. Similarly the others are different too.
    Some times one small ingredient or method in baking can make a huge difference. Welcome to the world of baking.

    Can u pls tell me how to make this recipe eggless.?
    I have made fondent with ur recipe, it is resting in the frz rite now. This was my first try with fondant.
    I have used agar agar, hope it works well.
    I am in search of good eggless cake recipes specifically vanilla flavour recipe.
