Chocolate Covered Strawberries

Guess what? This is my post number 100!!!! Yup. Can you believe it? I started this blog on the 8th of November. Today is the 16th April, so it's been five months and I already have 100 post.

I had been contemplating on starting a blog for over a year and despite every body encouraging me; I was not sure I would have the time to dedicate to the blog. Thanks to all the positive comments, support and encouragement I am pleased with the results. I crossed 50 thousand page views in less than six months.   Thank you everyone who has made this possible.

Now to today's post.....

The Strawberry season is coming to an end here and guess what? this year I never remembered to make some beautiful Chocolate Covered Strawberries. My kids love them and I always always make them at least a couple of times when they are in season.
I made these for a cake yesterday and thought that I'd share with you how easy and simple they are to make yet how classy and elegant they can make any dessert look. Top one over a strawberry or chocolate mouse. Garnish a bowl of fruit salad with these.... yum.


Though very easy to make these can be a bit tricky and frustrating if you are not careful.

Wash your strawberries under cold running water and let drain completely. 
Wipe them really well. If your strawberries are not completely dry, any drop of water that falls into your chocolate will seize the chocolate..
(that's what I meant by tricky and frustrating - now you know)
 I prefer to let them air dry for another hour at least after I dry them with a paper towel.

Melt some chocolate.
Just break any of your favorite chocolate into a bowl
and microwave for about 30 secs to one minute. Stir thoroughly before you place it back in the microwave again.

If not just place the bowl of chocolate over a bowl of simmering water. Make sure the steam does not go into the chocolate or the chocolate will seize.

Add about a tablespoon of vegetable oil to every 200 grams of melted chocolate.
This will thin the chocolate and give you a nice smooth and shinny finish on the strawberries. As well as make it easy to dip the strawberries.
 Now, pick a strawberry by the stalk (green) and dip into the chocolate.
 Pick it up and hold it for a second or two, let the excess drain.
 Rub the back of the strawberry over the edge removing any excess,
 Place on a parchment paper leaving enough room between each one of them.
 Once all are dipped. Just place them into the fridge to set.
 Use as desired...
