Eggless Vanilla Cake.

I've had quite a few request for Eggless Vanilla Cake recently, To be honest I do not make them so often any more.
I remember making these often in college for my vegetarian friends but not much after that. I know I have three recipes in my book. All these are actually not my own recipes but from friends or their moms.
I'm going to share them with you . I would appreciate if you try them out. Please do come back to me and let me know the out come. I only post recipes on my blog once I have tested it a couple of times.
These I have not made for many many years now, so would truly appreciate your feedback on whether they are still good or need testing.



Recipe One

285 grams / 3 cups - Cake Flour
1 1/4 tsp Baking Powder
1/2 tsp Baking Soda
1/4 tsp Salt
170 grams / 3/4 cup - Sugar
115 grams / 1/2 cup  Butter (room temperature)
180 grams / 1 Cup Plain Natural Yogurt (beaten)
2 tbsp Milk 
2 tsp Vanilla

Method:
  1. Preheat oven to 180C/350F
  2. Grease and line two 8" baking trays. 
  3. Sift Flour, Baking Soda, Baking Powder and Salt
  4. Cream Butter and half the sugar until light and fluffy - about 3 to 4 minutes.
  5. Add Flour, milk and Vanilla. 
  6. lastly add in the beaten yogurt. 
  7. Pour into baking tray and bake in the center of the oven for about 18 to 20 minutes or until the skewer inserted in the center comes out clean.
  8. Cool on a wire rack before decorating.

Recipe Two

340 grams / 3 cup - All Purpose flour
325 grams / 1 1/2 cup - Sugar
5 oz or 2/3 cup vegetable Oil
2 tsp Baking soda
2 tsp Vanilla
2 tbsp Vinegar
1 1/2 cups Cold Water.

Method:
  1. Preheat the oven to 180C/350F 
  2. Grease and line two 8" baking pans. 
  3. Mix sugar and oil until sugar is almost dissolved. Next add in the Vanilla, Cold water. 
  4. Sift the flour with the baking soda and salt. 
  5. Combine the wet ingredients into the dry ingredients very slowly to avoid lumps. 
  6. Once mixed well - add the Vinegar. 
  7. Immediately pour into baking pans and bake at 180C/350F for about 40 minutes or until the skewer inserted into the center comes out clean.
  8. Cool on a wire rack before decorating.

I do have one more recipe which contains condense milk but I can't seem to find it now - will look for it and up date the recipe.

  1. Hi i tried ur eggless cake recipe...it tasted really good,but i came across some flaws...
    after i add the flour it bacame like dough ,.... so 2tsp of milk vs not enough so i added about 1/4 cup...then after yogurt cake mix vs perfect.But wen i baked cake outter part s very nice but inner part vs sticky...May i know how to get rid of this.
