Sponge Cake



Sponge Cake
A sponge cake is ideal for children’s cakes or any tea time treat. It’s one of the easiest cakes to make too!


This cake will make a
8” Round two layer cake or  (20 cm)
7” Square two layer cake (18 cm)

Ingredients
230 grams (8oz) – Self rising flour
1 ½ tsp. Baking powder
Pinch of salt
230 grams (8 oz) unsalted butter softened (margarine to make it Parve)
200 grams Caster sugar
4 large eggs
2 tsp. extract – Vanilla or others.

Chocolate Sponge – replace 2 tbsp. of the flour with 2 tbsp. of unsweetened coco powder.

Method

Place all the ingredients in a mixing bowl and mix to combine. Once you have a smooth batter. Pour into a baking pan or divide into 2 baking pan.
Bake at 170C / 325 F 30 to 55 minutes.

A single layer cake might take approximately 45 minutes, if divided it would take approximately 25 to 30 minutes
  

Some of my favorite flavor combinations 

I like add a few tbsp's. of simple syrup or fruit juice on my sponge cake to give it a bit more moisture. 

Strawberry flavored sponge – filled with strawberry jam and decorated with fresh cream and strawberries.
Vanilla sponge – Jam filling and decorated with vanilla buttercream.
Vanilla sponge – Custard filling and decorated with vanilla buttercream
Lemon sponge – lemon curd filling and decorated with lemon flavor buttercream
Orange sponge -  Orange flavored chocolate buttercream
Chocolate Sponge – Chocolate mousse filling and decorated with chocolate buttercream
Chocolate Sponge –filled and decorated with Chocolate Ganache.

  1. I tried this recipe. Very nice. It was very easy to make.
    This was my first attempt at a scratch cake. I usually use on Pillsbury.
    My mother in law always baked from scratch and so my husband always spoke very highly of her. This time he asked if I used one of his mothers recipes. I knew I got it right.
    I was so light and fluffy. I didn't expect much from my self as I was trying it first time.

  3. Hi Veena...I tried this recipe by taking half the quantity mentioned and it came out excellent. I followed your tip of making self rising flour and it really tasted very nice...Iam so so thankful to you. I wanted to decorate it with some butter cream icing. But my kids didn't allow me to do that. They were after me to cut the cake fast. So i had to give away my idea of icing. They were asking for more and more pieces, that i had to hide the cake from them. Thanks a lot to you...I will be trying more cake recipes from your blog. I will post the recipe in my blog with a link to yours and update you once done.
