Rose Petal Wedding Cake

Are you guys wondering where I disappeared? Well, the kids are back to school now so hopefully you will see more of me around.
I did not take many orders the last three weeks so I could spend time with my kids. We did the usual stuff, take small trips, go to the pool and parks. The kids had fun.

Today I wanted to share with you a wedding cake I did with  Rose Petals.


The heat and humidity in Israel currently is the worst thing for cake decorating. I envy those people that live in pleasant weather and have no clue what we have to do here in summer. 


My fondant is usually much co-operative but not this time. It just wouldn't stop sweating. I think it was the Parve' cream that I used!  I can't leave the Air-conditioning on all the time! so that made it worst. 

At first when I placed the petals on they looked nice and fluffy. I had about 1/3rd of these petals on. But the sweating fondant eventually softened the petals and I had to add more petals. 
I loved how the cake looked as soon as the petals were first added and I really wish I had taken some pictures of it then. 
Ah, well.  This is what I mean when I say, learning every day with every new cake.

Wow!..This looks heavenly!I'm seeing amazing cakes I'm thinking I love it...:)The only way to fix these fondant sweating is cool room or adding gunpaste which becomes hard like rock or shortening,or using alcohol like vodka to spritz the cake instead of water.Fondant sweating can be such a sticky mess.

  2. Hi Veena u have an amazing blog and not many people will actually share their knowledge Di hats off to u.
    I into baking too. I live in a coastal area and hence have humidity throughout the year. I usually do fresh cream cakes with gum paste decoration but they start sweating once I leave them to dry. I wd love it if u have a solution gum tex or trag are not available here. If it possible can direct me to a good gum paste recipe thank u

    1. Hi Jaya, Very sorry to delay in replying to you..Not sure how I missed it.
      I know what you mean about humidity. I have the same problem here in summer and the same with the weather in Bombay.
      The only gum paste that works great in humidity is Nicholas Lodge's gum paste recipe. I use it too for my flowers and stuff. It dries fast and hard.
      I use my own gum paste recipe when I need to ensure it's edible on kids cakes and stuff. However it is made with meringue powder so can be very expensive.
      As for your cakes. If you use fresh cream you need to keep the cake in the fridge at all times until a few minutes before serving. So put the decorations only when you are ready to display your cake. Never put gum paste in the fridge. No matter how good your gum paste recipe is, condensation will soften it.
