Double Chocolate Chocolate Cupcakes

I hope you all are doing well.

I have already given you this cake recipe, but ever so often I make cupcakes with almost the same recipe that I thought I'd share the same with you today.
I like these with Dark Chocolate Ganache but you could use Chocolate Buttercream or Vanilla Buttercream too..



Makes about 18 to 24 cupcakes

Ingredients 
225 grams (1 cup)  Butter
300 grams (1 1/2 cups)  Dark Brown Sugar
4 large eggs
240 grams (2 1/2 Cups) cake flour
40 grams (1/3 cup )coco powder
100 grams (3.5 oz) Dark or semi sweet Chocolate.
1 tsp of baking powder
1/2 tsp of baking soda.
150 ml yogurt
75 ml of milk
1 to 2 tsp of Coffee dissolved in 2 tbsp of water
1/8 tsp salt.

Method:

Preheat the oven to 170C/340F
Prepare your cupcake pans for baking
Melt and cool the chocolate in a double boiler or microwave at 50% for 30 to 40 secs,


Cream the butter and sugar until light and fluffy.
 Sift together the dry ingredients.
 Once the sugar and butter is pale golden in color - add eggs one at a time.
If your eggs are room temperature they will be incorporated like so.
 Next add the melted, cooled chocolate.
 Next add in the yogurt and milk alternating with the flour.
 End with the flour mixture.
 Pour into cupcake pan. Bake in the center of the oven until a skewer inserted in the center comes out clean.
Cool completely before you decorate as desired..

  1. Terrific work!!Why do your cupcakes crack on top?How to avoid it or is it normal.Is it 75tblsp milk or 5 tblsp milk?Thanks for your kind replies.

    1. Thanks. The crack on the top is due to the white sugar I used in this recipe. If you use only brown sugar you will not have these crack. I ran out of brown sugar so substituted half with white sugar. They taste equally good though.
      It's 75 ml milk.
